Jack's Fusion Beef

We live 35 minutes from the closest co-op grocery store, so when we find ourselves with no food in the house we can't just run out to grab something. Instead, we have to get creative. We like to think of it as our own version of food TV competition: what can we make with a random assortment of on-hand ingredients? This time it was Jack's turn and the dish was fantastic!

Ingredients

  • 2T. Butter
  • 6 or so bell peppers - we had some frozen from last fall
  • 2 lbs ground beef
  • Ground cumin
  • Oregano
  • Garlic
  • Smoked paprika
  • Cinnamon
  • Soy sauce
  • Salt as needed
  • Chopped hot peppers (optional)
  • Corn from 6ish ears ... again we had this frozen from last fall


How-to

Warm butter in a large skillet then slowly cook the sweet peppers until they cook down and
caramelize.

Brown the ground beef while adding the spices, soy sauce, salt and hot peppers. Amounts of spices are up to you - add more of what you like and less of the others! (Sorry to those of you who really prefer explicit directions ... that's just not Jack's style in the kitchen!)

When the beef is mostly cooked through, add the corn kernels and heat until softened.
