BATs (Bacon, Avocado and Tomato)

Why didn’t we think of this sooner?! A bacon, avocado, and tomato sandwich was the perfect meal when Betsy came home from a long day of marching band and Jack had a long day of farming while parenting a toddler. Quick, easy, filling, super tasty, and loved by every member of the family. We will be making this again. And again and again….


Ingredients

  • A yummy locally grown tomato
  • Avocados
  • TC Farm bacon
  • Bread – we are really into sourdough these days


Preparation

  • Thinly slice tomatoes and avocados
  • Fry your bacon to desired crispiness – take it nice and slow to render out a good amount of fat
  • Fry slices of bread in the bacon fat to toast them – yummmmmmmm……..

With a fork, mash some avocado on a slice of bread and top with tomato and bacon. Grab a napkin or two and dive in! Just be sure to make enough that no one will be fighting over the last bite.


NOTE: when buying avocados.... always buy the greenest ones you can find. Then put them in a cabnet/pantry/paper bag and place other fruits in there with them for a few days (bananna, apple, etc) ... wait for a few day until they are just ripe and then put into your fridge to hold. This will ensure you never have 'bad' avocados and always have nice ripe creamy deliciousness.
