Korean Beef Bowl

A great way to add a little kick to your ground beef

Ingredients

  • 1lb ground beef
  • ¼ cup brown sugar, or a little less
  • ¼ cup soy sauce
  • 3 garlic cloves minced
  • ½ large onion diced (red or white)
  • 1 inch cube fresh ginger, minced
  • salt ‘n pepper
  • 1 bunch green onions
  • 2 cups rice
  • 2 heads broccoli cut into pieces 
  • 1 8oz mushroom package sliced
  • 3 decent sized tomatillos diced
  • 1 serrano pepper, seeded, and minced
  • sesame oil


Directions

Chop veggies and set aside

Start the rice and get that steaming

In a large skillet, add a generous amount of sesame oil. Add broccoli, mushrooms, and tomatillos and fry on medium heat. After stirring around for a few minutes, cover to allow the vegetables to steam a bit. Cook until done, about 5-7 minutes

Ditch the vegetables into a bowl. Add some more sesame oil to the pan and fry the onion on medium heat. After 3-5 minutes, add the ground beef, garlic, serrano, and ginger. Cook until the beef is lightly pink.

Add the brown sugar, soy sauce, pepper, and a little salt (don’t need much due to soy sauce)

Lower heat and simmer a couple minutes then add the bowl of vegetables. Stir around with spatula while simmering for a few minutes

Serve over rice, garnish with green onions


Notes: We substituted tomatillos for the original bell peppers, but either work just fine in the dish.
