Treat yourself to an Oven Pancake

Remember the restaurant Pannekoeken? Here’s our version.

These pancakes are quick, easy and super tasty. They aren’t so great for those of you on a traditional or GAPS diet… but whatever, go for it! These taste great and have lots of healthy short and medium chain saturated fats and CLAs thanks for the pasture raised butter, eggs and coconut oil.

Ingredients

  • 4T butter (2oz / half stick, we sometimes use coconut oil as well)
  • 4 pasture raised eggs
  • 1/2 cup grass fed whole milk (or water)
  • 1/2 cup organic AP flour (non-organic flour has pesticides sprayed on it AFTER harvest that you eat)
  • 1/4 t salt (don’t measure, just put in a pinch)
  • 1-2 t vanilla extract
  • 1/8 t baking soda

Instructions

  1. Pre-heat your oven to 425 degrees. We like to use convection bake if available.
  2. Melt the butter in your pan
  3. Add the eggs to a 4 or 8 measuring cup, then the flour and then liquid (water/milk). Add in the salt, vanilla, baking soda and melted butter (reserving some in the pan)
  4. Using an immersion blender, whip the batter together so that it is smooth and has lots of air in it. Add in the reserved butter/oil mixture while blending.
  5. Place the batter into the pan then into the center of your oven for 8-10 min if using convection. The edges should be browned, and the inside soft and glorious. Serve immediately and top with a jam, syrup, powdered sugar, or whatever.

Useful Tools

Apple Cinnamon

Add a few dashes of cinnamon to the batter before mixing.

Then after lightly cook some thin sliced apples in the pan with extra butter before adding the batter to the pan.

Chocolate Variation

Add chocolate extra for an awesome (and healthier) treat:

  • 1.5 T cocoa powder
  • 2 t organic sugar
  • a bit of extra liquid

A bit of sugar isn't a bad idea to counteract the bitter cocoa, but not required
