Thai Peanut Pasta with Ground Pork

This has been a favorite recipe of ours for a good 10 years … but we never realized until now that it would be PERFECT with ground pork! We’ve always made it with chicken or as a vegetarian dish but with the pork it has just now reached its full potential. This is a quick and easy weeknight meal – enjoy!

Ingredients:

  • 1 lb. pasta
  • 1 lb. pasture raised ground pork
  • 1 T. coconut oil
  • 1 T. toasted sesame oil
  • A bunch of green onions (6?)
  • 6 cloves minced garlic
  • 2 T. minced ginger
  • 1/3 c. honey
  • 1/3 c. peanut butter
  • 1/3 c. soy sauce
  • 4 T. rice vinegar
  • 3-4 shredded carrots

Instructions:

  1. Cook the pasta and drain.
  2. While the pasta is cooking, brown the pork, breaking it up into small bits.
  3. While the pork and pasta are cooking, make the sauce. Heat the oils together in a skillet then cook onion, garlic and ginger until soft – just a couple minutes.
  4. Add the honey, peanut butter, soy sauce and vinegar and whisk until everything is combined. Simmer the sauce for a minute or so and turn off the heat.
  5. Combine the pasta, pork, sauce, and carrots, serve and eat.

You could add all kinds of cooked vegetables to this; just increase the sauce recipe if you put much more in.

    This was really tasty! I'd add Sriracha to the sauce next time and maybe some red bell pepper and cilantro when you mix it all up!

    Tried this recipe last night and it was so good! I switched out the peanut butter to almond butter and used coconut aminos instead of soy sauce for my own dietary needs and it was still fantastic. Will definitely put this one on our rotation. Thanks for the great recipe!
