Slow Cooker Pork Roast

If you're like us, you're busy enough with work and daily activities that coming home to make a meal sometimes isn't what you want to do at the end of the day. That's one of the reasons we love our slow cooker. 

Slow cooked recipes are pretty easy - it's a mix of meat, veggies, spices and liquid. (I like to keep the veggies cut thick so they can have some texture after braising all day) We had this great pork roast with apples the other day. Check out the recipe below. 

Ingredients:

  • 1 2-3lb organic pork roast
  • 2-3 celery stalks coarsely chopped
  • 1 large onion coarsely chopped
  • 2 apples chopped
  • salt and pepper to taste
  • few thyme sprigs
  • 3-4 cups of chicken stock or water

Instructions: 

  1. Coarsely chop the veggies and apples and fill the bottom of the slow cooker.
  2. Season the pork roast with salt and pepper. 
  3. Lay the roast on the veggies and apples and add the thyme. 
  4. Cover the roast with stock (or water if needed) covering about an inch. 
  5. Turn on low and come back 8 hours. 

We usually make a big pot of rice for dinner (and then to go with the leftovers during the week).
