There is nothing like local heirloom carrots. We just love when we get them in our veggie CSA. They are fantastic raw, but add a bit of honey and ginger and you get something quite special for the few minutes of your time.
A dozen organic carrots, chopped
1" of ginger, finely chopped
1 T raw honey
Heat some oil in the pan over medium heat
Add carrots and ginger
Cook for 10 min or so until carrots are desired tenderness, you can cover if you'd like. It is nice if they can brown a bit, but not burn.
Mix in honey
