Squash Soup

Mmmmm, squash soup.  What a great way to feel warm and full on these colder, longer evenings.  So simple to make, too.


  • Carrots (chopped)
  • Onions (chopped)
  • Garlic (chopped)
  • Celery 
  • 1.5 cups brown rice 
  • 2 quarts TC Farm chicken stock
  • TC Farm brats (or any sausage)
  • Squash


  • Caramelize chopped carrots in butter until just about to brown
  • Add chopped onions and caramelize them both
  • Add chopped garlic and celery and 1.5 cups brown rice
  • Add 2 quarts TC Farm chicken stock and simmer covered until rice is cooked 
  • Sear TC Farm brats (or any sausage) and then chop, add to soup
  • Garnish with cooked delicate squash (4 minutes in the pressure cooker) and bread crumbs or butter fried bread and fresh thyme
