Chicken Nuggets

We just wanted to post this recipe since we had so much fun tinkering with recipe ideas and making them we wanted to share.

Ingredients

  • ~ 2 pounds chicken breasts
  • 1 C flour
  • 1 t salt
  • pepper
  • 1/4 t paprika
  • 3 eggs
  • 3 T water
  • 2 1/2 C bread crumbs
  • 1 t garlic powder
  • 1 1/2 t Italian seasoning
  • Cooking oil
    (we used a mix of coconut and olive oil, then strained and saved it in the fridge for next time)

Instructions

  1. Remove the skin from the chicken and discard; cut meat into bite-sized cubes.
  2. In a shallow bowl, combine the flour, salt, a few grinds of pepper, and paprika.
  3. In a second shallow bowl, scramble the eggs with the water.
  4. In a third shallow bowl, combine the bread crumbs, garlic powder, and Italian seasoning.
  5. Coat each piece of chicken in the four, then the egg, and finally the bread mix. Keep the breaded chicken on a baking sheet until all pieces are ready.
  6. Heat the oil in a large shallow pan - use enough oil to be about 1 inch deep. When oil is 350 degrees Fahrenheit, place individual chicken nuggets in the oil. Cook for two minutes then flip upside down with tongs and cook for two minutes further. Remove and place on a cooling rack.
  7. Note: the oil cools significantly when the chicken is added. Check it periodically and keep the heat high enough so it can catch back up to 350.
