This is an easy cooking week as we all prepare for the start of school. In our home, Betsy's gone at band camp all week (and was gone last week as well, so we're all getting tired...) so we're going as simple as possible at home while she eats all the frozen meals we put away earlier in the month.


Cuban Sandwiches

This quick-and easy sandwich is interesting and flavorful with two kinds of pork and your favorite pickles and mustard.


Thai Peanut Pasta with Ground Pork

We've made this countless times over the years - it's a recipe we always return to and never tire of. It's great with or without the pork and you can add other meats or vegetables to your liking. If you do add meat/veggies to the recipe, consider making 1 1/2 batches of the sauce - you don't want to skimp on it!
