As I'm writing this, the day is headed to 86º - autumn in Minnesota can be fickle like that. But. Those cool days and colder nights are just around the corner. Which means its time to start thinking about shifting some of your family's meals.
For those of you who are TC Farm members, that also means ordering for the fall and winter. Today I want to talk about the humble roast and why I think it might be the perfect autumn and winter meat.
To begin with, roasts are SUPER easy.
Like: "Toss it in the crockpot before work and have a delicious hearty meal waiting for you when you get home" easy. That great smell telling everyone they have a savory dinner ready. If you wanted to get a little fancy, you could even do something like our Savory and Sweet Pot Roast with Root Veggies recipe.
A beef or pork roast sitting in a slow cooker gets more tender and more flavorful through the day. They are the perfect food for tossing in the crock pot with whatever else you have around and letting the low, slow heat do the magic.
Look, I don't know how to tip-toe around this: It's going to get cold. Maybe not next week. But it's coming. On those cold days, you really can't beat the feeling of walking in, that roast filling up your house with warm memories. They smell warm and cozy. They are tasty. And most everyone, from kids to guests, are sure to love them.
I don't know how things work in your house, but for us, we love cooking at home but don't always have the time to start from scratch. Roasts are just about the perfect food for making a double and triple batch -- then freezing the extra. When it comes time to have a hearty home-cooked meal but you don't have the time, look at that, a roast in the freezer, ready to eat, just reheat!
Often overlooked, especially in the summer, the beef roast is something you might forget about but you definitely want to have around in the freezer for when it starts to get colder. Roasts should be around 3-4lbs each and are bone-in. Great for the crockpot or the smoker. Some packs may include a fresh ham roast, but typically these are shoulder roasts.
