Simple Salsa

Ingredients

  • 1- 1.5 lbs tomatoes (it can be a mix of Roma, slicer, cherry)
  • 1 small white or red onion peeled and roughly chopped
  • 1 - 2 jalapeño peppers seeded and chopped
  • 2 cloves garlic chopped
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • ½ cup chopped cilantro
  • Juice of one lime

Directions

  1. Roughly chop the tomatoes, garlic, peppers, and onions, and cilantro.
  2. Place all the ingredients in a food processor and pulse a few times to finely dice ingredients. If you don’t have a food processor you can finely dice everything by hand then combine the mixture with salt, lime juice, and cumin in a bowl.
  3. Taste the salsa and adjust as necessary.
  4. Transfer to airtight container and let sit in the refrigerator for a couple of hours for best flavor.
  5. Serve with tortilla chips and enjoy!

*Get creative, stir in chopped green peppers, corn kernels or black beans!
