Roasted Cauliflower with Mustard Dressing

Ingredients

  • 1 head cauliflower
  • 1 14oz can garbanzo beans
  • Olive oil
  • Salt
  • Pepper
  • 2 tbsp Stoneground mustard
  • 2 tbsp Dijon mustard
  • 1tbs White Wine or Rice Vinegar
  • Parsley

Directions

  1. Preheat oven to 400 degrees
  2. Remove cauliflower florets from the stem, breaking them up into bite size pieces. Rinse and drain the garbanzo beans.
  3. Combine garbanzo beans, cauliflower in a 9 x 13 baking dish with 3 tbsp of olive oil, salt, and pepper and bake for 20 minutes or until cauliflower is fork tender.
  4. Whisk together mustards, vinegar and ΒΌ cup of olive oil.
  5. Once the cauliflower and chickpeas are baked toss with mustard dressing and parsley.
