Kumquat Marmalade

Ingredients

  • 8 oz. mandarinquats
  • 3 cups water
  • 2 cups sugar
  • 1/2 tsp. cardamom, ground

Directions

  1. Wash the mandarinquats, scrubbing the rind well.
  2. Juice the mandarinquats into a bowl over a strainer to catch the seeds.
  3. Slice the rind and pulp into very thin strips and place in a small sauce pan.
  4. Add the juice and 3 cups of cold water into the sauce pan and bring to a boil.
  5. Reduce heat to low and simmer uncovered for about 35 minutes.
  6. Once the rind has simmered for 35 minutes, add 2 cups of sugar and stir until sugar has dissolved.
  7. Once the sugar has dissolved, bring the marmalade to a full boil for 10 minutes. Skim off any foam that develops.
  8. Remove the marmalade from the heat and let cool for a few minutes. Stir in the cardamom.
  9. Pour the marmalade into a jar and allow to fully cool, uncovered at room temp.
  10. When cooled, store in the fridge.
