Roasted Acorn or Carnival Squash

Ingredient

  • 1 acorn squash
  • 1 Tbsp butter
  • 2 Tbsp brown sugar
  • 2 tsp maple syrup
  • Pinch of salt

Directions

  1. Preheat the oven to 400°F
  2. Cut the squash in half long ways, from tip to stem.
  3. Scrape out seeds.
  4. Score the inside of the squash halves in a cross-hatch pattern.
  5. Place the squash halves cut side up in a baking pan. Add 1/4 cup water to the pan to prevent the squash from burning or drying out.
  6. Rub 1/2 Tbsp butter into each squash half. Sprinkle in a bit of salt. Add 1 Tbsp of brown sugar into the center of the each half and drizzle with 1 tsp of maple syrup.
  7. Bake at 400 for about 1 hr to 1 hr and 15 minutes or until browned.
