Peanut Butter, Celery and Pork Noodles

Ingredients

  • 1 lb ground pork
  • 1 lb linguine
  • 6 cloves garlic, thinly sliced
  • 2 inch piece of ginger, grated
  • 4 celery stalks with leaves, chopped
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 rice vinegar
  • 3 Tbsp Sriracha
  • 3 Tbsp honey

Directions

  1. Bring a large pot of very salty water to boil and cook the pasta to package instructions. Reserve 1 1/2 cups of pasta water.
  2. In a medium sized bowl sauce whisk together peanut butter, soy sauce, vinegar, sriracha, and honey until will combined. Set aside.
  3. Divide 1lb ground pork into four patties and season with salt and pepper.
  4. Cook pork patties in a large Dutch oven over medium-high heat. Cook undisturbed until browned, then flip. Once both sides are browned break up the patties with a spatula into bite-sized pieces.
  5. Add garlic and ginger and cook for 2 minutes until fragrant.
  6. Add the drained pasta to the Dutch oven along with peanut sauce and a splash of pasta water.
  7. Turn heat to medium and cook, stirring and adding pasta water until the noodles are well coated. Stir in sliced celery.
  8. Serve topped with celery leaves and chopped peanuts!

    I am planning to make this for dinner tonight. In reviewing the recipe there is instruction to add a toss of “pasta sauce” but that is not a listed ingredient. Do you mean just a toss of store bought pasta sauce or pasta water?

    Good catch! "pasta sauce" was a typo it should be pasta water!
