Tetsukabuto Tempura

Ingredients

  • 1 Squash, sliced into 1/4 inch thick half-moons or circle with or without skin
  • 1 egg
  • 1 cup ice cold water
  • 1 cup flour, sifted
  • Vegetable oil

Dipping Sauce

  • 2/3 cup water
  • 1/4 cup mirin*
  • 1/4 cup soy sauce
  • 1/2 Tbsp sugar

* Mirin is sweet rice wine. In a pinch you can substitute by combining 4 Tbsp Sake with 4 tsp sugar.

Directions

  1. Prep kabocha slices- check out article linked below.
  2. Heat oil in a small cast iron skillet to 375°F.
  3. Combine egg, flour, and ice cold water in a small bowl. Make sure the water is very cold.
  4. Dip kabocha squash slices into the batter and using tongs, place in hot oil. Careful not to crowd the pan.
  5. Cook each slice for 2-4 minutes or until tender.
  6. Serve hot, with dipping sauce.
