    Herb-Stuffed Chicken Breasts

Looking for a fresh, easy, and tasty way to use your boneless chicken breasts? We loved this. We separated the tenders from the breasts and made them all the same way so we ended up with normal-sized and kid-sized rolls in the end.

    Birthday Cake Challenge

I can hear it now - Oh come on... really? what has this world come to when kids need a sugar free birthday cake?!? Wait... Just wait... this cake is really good, I promise. It also is super healthy for you and your kids. There are no 'pretend' colors, or allergens, or anything that should cause any distress to a growing or aging body. Oh, did I mention it takes no time to make?

    Deconstructed Meatballs

Meatballs take more time that we have right now. Instead of spending my entire evening cooking, I made the following recipe loosely based on the meatball recipe. We served this on top of plain cooked quinoa, but any grain you like to use would do fine. Rice, cous cous, pasta – use whatever you have in your pantry.

    Zuppa Toscana

I used to love this soup at that chain Italian joint. That is until we pretty much stopped eating refined grains or meat from a factory. I can’t wait to have some of this again, what a great idea!

Roasted Garbanzo Beans with Swiss Chard and Garlic

This is a great side dish that goes with everything... or it could even be a main dish if you prefer!

    Our favorite healthy chocolate treat

As we learned more about nutrition and human biology, it became clear that excess grains and refined sugar was bad for us... and not in the 'some day' sense, but noticeable right now. However, we still love chocolate and needed a way to get our fix...

    Amazing Banana Pancakes

Kids love pancakes. The trouble is that even gluten free ones are full of processed flour which are really hard on developing bodies. These 'cakes' are a HUGE hit with our kids and we love how healthy they are.

Savory and Sweet Pot Roast with Root Veggies

This recipe is a little more work than a basic pot roast, but it really is fantastic. Give it a shot!

    Card image

    Chicken Pot Pie

A classic favorite but it tastes SO much better with our TC Farm chicken. Something to warm you up on these cold January evenings!

    Risotto

Risotto is really simple to make, but it is outstanding when done right. The trick is having patience as well as good rice and broth. It can be a stand alone meal or a side dish. I love taking the time to caramelize the onions this recipe calls for...

    Paprika Beef Stew

This is our favorite recipe for beef chuck roasts. We love to make up a bunch of it and freeze portions for later use.

    Gotta Have it Pate'

Liver, a ‘traditional food’, is very nourishing yet does not have a presence in most modern households. If you have never given liver a chance, this is a great way to try it.

    The Best Eggnog

If you're going to splurge and have eggnog, you really ought to make it yourself. It is quite easy and delicious! Seems like the New Year is a perfect time to serve this up for some guests!

    Crème Brulee a la Betsy

A delicious treat that your family and guests will love. Not nearly as hard to make as you might think. Read the recipe to learn more and be sure to watch Betsy's video to see for yourself! Makes 6 servings.

    Mashed Parsnips

Parsnips are really super good, probably my favorite side right now. Consider doubling this recipe and save the extras for the next morning to make cakes fried in bacon fat to have with your eggs.

    Oven Pancake

Remember the restaurant Pannekoeken? Here’s our version. These pancakes are quick, easy and super tasty. They aren’t so great for those of you on a traditional or GAPS diet… but whatever, go for it! These taste great and have lots of healthy short and medium chain saturated fats and CLAs thanks for the pasture raised butter, eggs and coconut oil.

    BATs (Bacon, Avocado and Tomato)

Why didn’t we think of this sooner?! A bacon, avocado, and tomato sandwich was the perfect meal when Betsy came home from a long day of marching band and Jack had a long day of farming while parenting a toddler. Quick, easy, filling, super tasty, and loved by every member of the family. We will be making this again. And again and again….

    Chorizo, potato and peppers

Our chorizo isn't dried like a traditional sausage, so it is a bit more versatile. Here is a simple dish that works for breakfast or dinner.

    Roasted Beets

Nothing goes with a great burger or fries like some delicious roasted beets! These are good warm or refrigerated. You can also freeze the beets before topping and save them for a quick dish later.

Spiced Couscous with Raisin and Almond

Great with our Moroccan-Style Chicken. A sweet treat and so easy to make!

    Moroccan-Style Roast Chicken

This is a delicious dish. Remember: If your spices are old and don’t have a robust smell to them, it is worth getting new ones before trying this dish. Don’t buy spices at big box grocery stores. How long do you think the turmeric sits on the shelf there before someone buys it? Shop for these spices at a local Co-op with a good bulk spice selection.

Pork Chops with Capers and Cream

Here is an amazingly simple and tasty recipe for your pork chops or loin roasts. We took these chops off at around 135 degrees.

Round steak stew/sauce with carrot, tomato and soy sauce

This dish is a cross between a stew and beef with sauce. Consider adding potatoes or fried bread as a side. Don’t waste your time measuring anything with this one. I made up the amounts after the fact anyhow!

    Pork shoulder with mustard-mushroom gravy

A great way to serve up a pork shoulder. Tender, juicy and SO MUCH FLAVOR! We made some mashed parsnips and potatoes as a side. Enjoy!

A fantastic meal… Wow is this good! It is delicious with parsnips or with wild rice.

Brisket - Sous Vide and Smoked

This is by far the best way to cook grass fed brisket. Without a sous vide, you could never get the amazing texture and while the smoking is optional, it is highly recommended.

    Simple Chicken Soup

Betsy whipped this soup up tonight while we were making a different dinner. It is great to be able to make meals ahead of time that are quick and easy to pull out of the fridge or freezer!

    Buttery Liquid Gold - Stock

If you've never made broth from our stockbones, you really haven't lived. It is one of the things that really differentiates our products from the factory stuff in the store -- or even most stockbones at a farmer's market. Rich, buttery, healthy and soul filling... give it a shot!

    Grandma's Chicken Quinoa Salad

The perfect dish for entertaining guests. Or to use up any type of chicken you have in your freezer. Plus it tastes super good and is easy to make!

    Chicken Confit

Confit is an increasingly popular but traditional French way of curing, cooking and preserving meat. I can’t believe I lived so long without making it before. It always sounded like it was too much work. Then our friend Carl was over helping process our ducks and shared his passion for confit. We made up our own confit duck and loved it. I decided to try some confit chicken for a family Christmas party and it turned out FANTASTIC. This takes a bit of planning ahead, but is a fairly simple way to make lots of fantastic food!
