However, we also want to minimize food waste by ensuring the included food is usable in our busy lives! Plan on some foods from out of state, especially fruits and outside of the Minnesota growing season.

Making mashed potatoes seems simple and it is... but a few tips and tricks will turn those potatoes into a masterpiece of texture and taste-bud pleasure!

Healthier than restaurant fries but just as delicious!
We missed having real pickles around and our last produce delivery had a bit more radish than we wanted on fresh salads.... So we made these super easy pickled radishes and enjoyed them on burgers, brats or just by themselves!
This is probably Betsy's favorite dressing to have around. It is quick and easy to make and is great on just about everything. Think salad dressing, chicken, veggie dip, veggie salad, gyro, etc.
Something a little different. We know you aren't going to eat meat at every meal! Here's a healthy and delicious salmon salad that is so easy to prepare and tastes fantastic.
Most of the time the beets we encounter already have their greens cut off because removing the greens keeps the beet root fresh for longer. But beet greens are really yummy and good for you! They often can be used in place of greens like spinach, kale and chard but they are delicious all on their own.
Fermented beets are so tasty and good for you... filled with probiotics, they are a perfect way to capture a bit of summer. Using an InstantPot or other e-Pressure Cooker is an ideal way to cook beets.
Beets are SO good, but they also require planning ahead to roast and use in things... I love having this quick option for a great salty and sweet snack or side dish!
Nothing goes with a great burger or fries like some delicious roasted beets! These are good warm or refrigerated. You can also freeze the beets before topping and save them for a quick dish later.
The sweetness of the dates balances the bitterness of the radicchio to make a super side dish that can easily be adapted to include items you already have at home. Try serving it over barley for a hearty grain salad!
A fun recipe that has us dreaming of summer. You don't have to make your own pesto, but it is so good when fresh.

This is fantastic -- a superfood and easy to make. When I first tried making this, I didn't expect much, but it turned out so good that I was glad I made two whole cauliflowers worth!
