Please note that we are aiming to include a balanced share which maximizes local and heirloom produce. However, we also want to minimize food waste by ensuring the included food is usable in our busy lives! Plan on some foods from out of state, especially fruits and outside of the Minnesota growing season.

Minnesota's fruit season is fairly short; we will feature seasonal specialty fruit year round at its peak flavor, but will also include every day fruits in every package.

Recipe Ideas from This Week's Produce

This week's produce share features some GIANT and not-so-giant kohlrabi, here are a few ideas on how to cook this funny-looking veggie.

We get so many great veggies from the veggie CSA we belong to. There are always items in the box that are a little unfamiliar though. We found a couple great ways to use them. Try this side dish for a vegetable you might not know as well...

Most of the time the beets we encounter already have their greens cut off because removing the greens keeps the beet root fresh for longer. But beet greens are really yummy and good for you! They often can be used in place of greens like spinach, kale and chard but they are delicious all on their own.

Fermented beets are so tasty and good for you... filled with probiotics, they are a perfect way to capture a bit of summer. Using an InstantPot or other e-Pressure Cooker is an ideal way to cook beets.

Beets are SO good, but they also require planning ahead to roast and use in things... I love having this quick option for a great salty and sweet snack or side dish!

Nothing goes with a great burger or fries like some delicious roasted beets! These are good warm or refrigerated. You can also freeze the beets before topping and save them for a quick dish later.

I LOVE this creative way to use Swiss chard and it always gets rave reviews. Try this recipe without the pasta for delicious side. Just cut back a bit on the oil and butter.

Risotto is really simple to make, but it is outstanding when done right. The trick is having patience as well as good rice and broth. It can be a stand alone meal or a side dish. I love taking the time to caramelize the onions this recipe calls for...
