Minnesota's fruit season is fairly short; we will feature seasonal specialty fruit year round at its peak flavor, but will also include every day fruits in every package.

This roasted chicken recipe is finger licking good! Plus, it comes together super quickly and is almost impossible to mess up. My favorite kind of recipe.

A member sent us the following recipe. What a great way to use the TC Farm spinach you get in your produce boxes. And a delicious way to start the morning too!

There are a few methods out there for how to cook spaghetti squash. In my opinion, halved and baked cut side down is the best method. Hands down.

A fun recipe that has us dreaming of summer. You don't have to make your own pesto, but it is so good when fresh.

A universally simple and delicious way to cook any squash...except spaghetti squash.

This is a fantastic dish full of cumin and citrus.

Just because it's cold doesn't mean you have to STAY cold. This quick and easy soup will leave you feeling warm and content.

We love vegetarian meals. Rice isn’t something we should eat all the time for a wide range of reasons, but there nothing like a REAL risotto with Arborio rice. Strictly speaking this dish isn’t vegetarian since a homemade broth is essential to the flavor. The broth also adds electrolytes and helps cushion the onslaught of carbs the rice throws at us. This meal takes time to do it right, but it is easy. Just get a glass of wine and have a nice conversation.

Betsy whipped this soup up tonight while we were making a different dinner. It is great to be able to make meals ahead of time that are quick and easy to pull out of the fridge or freezer!

I used to love this soup at that chain Italian joint. That is until we pretty much stopped eating refined grains or meat from a factory. I can’t wait to have some of this again, what a great idea!

A members' summer/fall favorite. I love this recipe, and had to share!

Nothing goes with a great burger or fries like some delicious roasted beets! These are good warm or refrigerated. You can also freeze the beets before topping and save them for a quick dish later.

Beets are SO good, but they also require planning ahead to roast and use in things... I love having this quick option for a great salty and sweet snack or side dish!

Fermented beets are so tasty and good for you... filled with probiotics, they are a perfect way to capture a bit of summer. Using an InstantPot or other e-Pressure Cooker is an ideal way to cook beets.

We get so many great veggies from the veggie CSA we belong to. There are always items in the box that are a little unfamiliar though. We found a couple great ways to use them. Try this side dish for a vegetable you might not know as well...

There is nothing like local heirloom carrots. We just love when we get them in our veggie CSA. They are fantastic raw, but add a bit of honey and ginger and you get something quite special for the few minutes of your time.

A twist on potatoes au gratin packed with ooey gooey cheesy goodness.

When we started our farm, we were so busy... I swear we lived off of these roasted potatoes and pan-fried ground beef. Check out the secret to the best-tasting potatoes!

Card image

Wasn't sure what to make tonight for dinner... Pizza Potatoes, that'll be good, right?

Card image

This dish is a cross between a stew and beef with sauce. Consider adding potatoes or fried bread as a side. Don’t waste your time measuring anything with this one. I made up the amounts after the fact anyhow!

Making mashed potatoes seems simple and it is... but a few tips and tricks will turn those potatoes into a masterpiece of texture and taste-bud pleasure!
