Bacon and Pea Pasta

This weeknight meal is simple to make and everyone in our family loves it - what could be better?! Pair with a salad or roasted vegetable, or just eat as a single-dish meal.

Ingredients

  • 1 package TC Farm Bacon - we like to use the European Style Herb Bacon
  • 1 lb pasta of your choice
  • 1 10oz bag frozen peas (or use fresh peas if in season)
  • 1/4 C cream
  • juice of 1 lemon

Instructions

  1. Cook pasta in a pot of salted boiling water.
  2. Chop bacon crosswise into small strips. Fry in a heavy large skillet until just crispy.
  3. Add peas to bacon in skillet; cook until thawed (about 3 minutes)
  4. Add cream, lemon juice, and cooked pasta to skillet. Stir to heat through.
  5. Season to taste with salt, pepper, parmesan and/or add more cream
