Weekend Prep

The key prep work this weekend includes:

  1. Prep all the veggies so there isn't any cutting work to do mid-week (this saves time to do it all at once.)
  2. Start the Pineapple Pulled Pork in the slow-cooker (make with two roasts and freeze).
  3. Chop a bunch of veggies and fruit to pull out for easy lunches throughout the week.

Pineapple Pulled Pork

This is a good slow-cooker recipe. It will feed a crowd and is flavorful and sweet but not spicy or filled with sugar. It also makes great left-overs for the rest of the week; we like to make it on the weekend so we're ready for lunches all week long.

Mushroom Pasta

Did you get our mushroom box this week? So. Many. Morels. In celebration, make this simple recipe highlighting these yummy treats. We love the freshness the lemon brings to the sauce; it is perfect for early summer.
