Roasted Hokkaido Squash

Ingredients

  • 1 Hokkaido squash
  • Salt to taste
  • pepper to taste
  • 1 tsp rosemary
  • 1/2 tsp thyme
  • 5 cloves garlic, peeled
  • olive oil

Directions

  1. Preheat oven to 355 degrees F.
  2. Slice squash in half and scoop out seeds.
  3. Cut squash into 1 inch thick slices and spread onto parchment paper-lined baking sheet.
  4. Drizzle with plenty of olive oil and toss with salt, pepper, rosemary, thyme, and whole garlic cloves.
  5. Roast for 30 minutes or until soft.
