Radish and Turnip Hash

Ingredients

  • 1 1/2 cups cubed turnips, trimmed peeled and cut into 3/4 inch cubes
  • 1 1/2 cups cubed radishes, scrubbed and trimmed and cut into 3/4 inch cubes
  • 2 cloves minced garlic
  • 2 Tbsp butter
  • 4 eggs
  • minced parsley

Directions

  1. Boil water salted with 2 tsp of salt in a large sauce pan.
  2. Boil turnip cubes until tender, 3-4 minutes. Remove the turnips from the water and set aside.
  3. Blanch radishes for 30-60 seconds in the same boiling water the turnips were cooked in.
  4. In a large cast iron skillet heat 2 Tbsp of oil over medium-high heat. Add turnips and radishes and a pinch of sea salt and pepper.
  5. Cook veggies until golden brown, about 8 minutes. Add garlic and cook for about a minute more.
  6. Push veggies to the side and melt butter in the center of the skillet. Add eggs and fry until cooked to your taste!
  7. Top with minced parsley, salt and pepper to taste.
