Shiitake Mushrooms
Shiitake have a rich, earthy & meaty flavor and are great to use in stir-frys, soups & noodle dishes and are an excellent meat substitute.
King Trumpet Mushrooms
King Trumpets have a firm, meaty texture and a great range of flavor. They can be sautéed, grilled, braised, stewed, or broiled. Unlike many mushrooms, the stem has the same wonderful texture and flavor as the cap.
Grey Oyster Mushrooms
These meaty mushrooms have a slightly firm texture and a mildly earthy flavor- Wonderful in soups, sauces, or pasta dishes. When cooked, their texture becomes softer and almost oyster-like!
White Alba
Alba mushrooms are distinguished by their mild shellfish flavor and retain their crunchy texture even after sautéing! We recommend a hot sauté to coax the most flavor out of this mushroom.
Lion's Mane
Lion’s Mane has a distinctive, fuzzy looking appearance and a savory & slightly sweet flavor. We recommend slicing the clusters into 3/4” “steaks” and sautéing with olive oil or butter.
Maitake Mushrooms
Maitake have a deep umami flavor and a semi-firm texture. These mushrooms are very versatile & can be used raw or cooked.
Black Pearl
Black Pearls are a hybrid between oyster and king trumpet mushrooms. Dense and meaty, they have large edible stems. Black Pearls have a unique flavor and peppery aftertaste and make a great addition to soups & chilis, pastas and other dishes!
