The cut itself: a full 1¼" thick, aged 21 days, from Northstar's own licensed and inspected processing facility in Cameron, WI. Ribeyes carry more intramuscular fat than leaner bison cuts — that's what gives this steak its fuel and its richness. The zero-stress field harvest matters here more than anywhere else in the lineup: when an animal is harvested in its own pasture environment without the cortisol surge of feedlot slaughter, the muscle stays tender and the flavor stays clean.
