One whole Red Ranger chicken between 3.75 and 4.6 lbs. Most people have only ever eaten Cornish Cross — the broad-breasted white bird that dominates every grocery store and most farmers markets. Red Rangers are different in almost every way. They’re reddish-auburn in color, athletic in build, and genuinely active birds that spend their days ranging across pasture rather than standing at a feeder. The meat is firmer, darker, and richer — more like what chicken used to taste like. Plan to cook them a little lower and slower than you might be used to, and don’t skip the carcass for stock. The bones are incredibly dense and make a broth that’s in a different league.
