Crispy Air Fryer Pork Belly Bites

With pasture-raised pork on sale this week, I couldn’t resist sharing one of my go-to family recipes: crispy air fryer pork belly bites. I make this dish a few times a month because it’s one of the rare meals that everyone in my house agrees on—crunchy, chewy, savory, sweet, and just the right amount of zing. It’s so good, there are never any leftovers! Whether served as an appetizer or main dish, it’s always a hit—especially when made with Minnesota-raised pork from TC Farmer Keith.

Ingredients:

Skinless Pork Belly:
- 1½ lbs pork belly
Korean-Style Marinade:
- 2 tbsp soy sauce
- 1 tbsp gochujang (Korean chili paste)
- 1 tbsp sesame oil
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp grated ginger
- ½ tsp black pepper
- 1 green onion, finely chopped (optional)

For Serving:
- Steamed white rice
- Kimchi (napa cabbage or cucumber)
- Optional garnish: sesame seeds, chopped green onions

Marinade Instructions

1. Slice skinless pork belly into 1-inch strips or cubes.
2. Mix all marinade ingredients in a bowl.
3. Toss pork belly in the marinade and refrigerate for at least 1 hour, preferably overnight.

Cooking Steps:

1. Preheat air fryer to 375°F (190°C).
2. Lightly oil the basket and arrange pork belly pieces in a single layer.
3. Air fry for 20-25 minutes, flipping halfway, until caramelized and slightly crispy. (It's a good idea to keep a close eye on these as they cook because air fryers work differently)
4. Let rest for 5 minutes before serving.

Serving Suggestions

- Serve pork belly over steamed white rice.

- Add a side of kimchi for a traditional Korean touch.
- Garnish with toasted sesame seeds and chopped green onions if desired.
We love our pork belly bites served on top of white rice and served with either kimchi or stir fried pakchoy but for a no-carb option, you can simply serve these as lettuce wraps. Mashikeh-mogo! (Bon appetit in Korean)
