Our recipe is simple, and our approach, traditional: patience, wheat and water. We slow extrude this cavatappi from Italian organic durum wheat semolina, then dry it slowly at low temperatures to reproduce the traditional way of making pasta, preserving its color, texture and aroma.

  • One ingredient: Italian organic durum wheat semolina, made in Italy
  • Slow extrusion leaves a rougher surface that captures sauces
  • Al dente in 7 minutes, fully ready in 8

Hailing from Southern Italy, this fun, springy pasta is a twisted "corkscrew" with a hole through the center. As sturdy as it is whimsical, cavatappi is ready to take on hearty sauces and chunky ingredients. We love it in cheesy baked pasta dishes with spicy sausage and peppers, and in cold pasta salads with fresh vegetables. It is just as happy under a classic tomato sauce, a creamy cheese sauce or a meat ragù.

We select and blend high-quality Italian organic durum wheat for its golden color, aroma and high protein content, so the pasta keeps its shape, structure and flavor. The wheat is expertly milled into coarse semolina, then kneaded with cold, fresh, mineral-rich mountain spring water. Cook it to the perfect al dente bite: a tender exterior balanced by a firm bite with a fleck of white at its core... the pasta's soul.

At DeLallo, what began in 1950 holds true today: our family's passion is to craft and share wonderful Italian food.

Ingredients: ITALIAN ORGANIC DURUM WHEAT SEMOLINA.

Common Questions

What pasta shape is best for a pasta bake or baked mac and cheese?
Our DeLallo Organic Cavatappi is made for pasta bakes: its springy corkscrew twists and hollow center hold cheese sauce, and the shape is sturdy enough for hearty sauces and chunky ingredients. A baked pasta cooks twice, first in the pot and then in the oven, so it needs a sturdy shape with places for sauce to settle. We slow extrude our cavatappi, which leaves a rougher surface that grips creamy sauces. Boil it slightly short of al dente before it goes into the dish, because it keeps softening as it bakes. Our favorite is a cheesy bake with spicy sausage and peppers.

What's a good organic pasta made in Italy?
DeLallo Organic Cavatappi is certified organic, made in Italy, and has one ingredient: Italian organic durum wheat semolina. When you compare organic dry pastas, look at the wheat and the drying. Durum semolina gives pasta its firm bite, and slow drying at low temperature protects color and texture better than fast high-heat drying. We select and blend Italian organic durum wheat for its golden color, aroma and high protein, which helps the pasta keep its shape. The semolina is coarse ground and kneaded with cold, mineral-rich mountain spring water, then dried slowly at low temperatures the traditional way. It is also certified kosher.

What pasta shape holds up well in a cold pasta salad?
We love our DeLallo Organic Cavatappi in cold pasta salads with fresh vegetables, from a simple side to a picnic pasta salad. The twists and the hole through the center catch vinaigrette and small bits of chopped vegetables, so every forkful carries some dressing. For salad, cook the pasta to al dente, then rinse it under cold water to stop the cooking and wash off surface starch that would make it clump.

How long do I cook DeLallo cavatappi for al dente?
Cook DeLallo Organic Cavatappi for 7 minutes for al dente, or 8 minutes for a softer finish. Use plenty of well-salted boiling water and stir in the first minute so the corkscrews don't stick together. For us, the perfect al dente bite has a tender exterior balanced by a firm bite, with a fleck of white at its core, what we call the pasta's soul. Taste a piece a minute early to catch that point.

Is DeLallo Organic Cavatappi gluten-free?
No. DeLallo Organic Cavatappi is not a gluten-free pasta. Its only ingredient is Italian organic durum wheat semolina, so it contains wheat. We make separate gluten-free pastas, and this cavatappi is not one of them.

What sauces go best with cavatappi?
Our DeLallo Organic Cavatappi works with classic tomato sauces, creamy cheese sauces and meat ragùs. It is sturdy enough for hearty sauces and chunky ingredients, so pieces of sausage, peppers or ground meat settle into the curls. Thin, delicate sauces suit long strands like angel hair better, while cavatappi's hollow center fills up with a thicker sauce.
