Our fondue is made in Switzerland from three Swiss cheeses: Emmental Switzerland AOP, Le Gruyère AOP and Raclette. White wine and cherry brandy go into the pot with them, the way a traditional fondue is made. All you do is open the pouch and heat it.

Pour the pouch into a fondue pot or pan, bring it quickly to a boil, stir continuously and season to taste. Then set the pot over a sterno or burner and keep the fondue at a boiling point while you eat. An electric fondue pot works too. Cut bread into cubes, spear them on a fork and dip. Boiled potatoes, crunchy vegetables and pieces of fruit are good alternatives to bread. Potato starch keeps the fondue thick and guar gum keeps it smooth.

At Mifroma we began in 1964 as a Gruyère ripener in the Fribourg countryside, maturing cheese in an old quarry we converted into a natural cheese cellar. We were also pioneering in fondue: we launched the first fondue mix to be distributed by the mass market, paving the way for this product category.

Is ready-made cheese fondue as good as making it from scratch?
Our Mifroma Cheese Fondue gives you a classic Swiss fondue without the fussy steps of a scratch recipe. Homemade fondue means grating cheese, balancing wine against starch and melting slowly so the cheese doesn't clump or split. We handle that part for you. The fondue is thickened with potato starch, stabilized with guar gum and kept smooth with two emulsifiers, polyphosphate and disodium phosphate[P-ingredients]. It is made in Switzerland, and our company, a Gruyère ripener since 1964, launched the first fondue mix sold on the mass market.

What cheeses are used in Swiss cheese fondue?
Our Mifroma Cheese Fondue is made with three Swiss cheeses: Emmental Switzerland AOP, Le Gruyère AOP and Raclette. Gruyère and Emmental are the traditional backbone of Swiss fondue. Gruyère brings a nutty depth and Emmental a milder taste with good stretch. AOP is a protected designation of origin, which means the cheese has to be made in its defined Swiss region following the traditional method. Raclette is another Swiss melting cheese, known for how smoothly it melts. The cheeses contain milk, cheese culture, salt and enzymes[P-ingredients].

What can you dip in cheese fondue besides bread?
With our Mifroma Cheese Fondue, we recommend boiled potatoes, crunchy vegetables or pieces of fruit as alternatives to bread. Small boiled potatoes are a Swiss favourite because they hold up well on a fork. For vegetables, lightly blanched broccoli, cauliflower, bell pepper strips, cherry tomatoes and mushrooms work well. For fruit, firm apple or pear slices and grapes balance the richness of the cheese. If you choose bread, cut it into cubes so each piece stays on the fork when you dip it. Day-old crusty bread holds together better than soft fresh bread.

How do you prepare Mifroma Cheese Fondue? Does it need to be boiled?
Yes. Our Mifroma Cheese Fondue should be brought quickly to a boil. Open the pouch, pour the contents into a fondue pot or pan, and heat it while stirring continuously. Once it boils, season it to your taste. Freshly ground pepper or a pinch of nutmeg are common choices. Stirring keeps the cheese from sticking to the bottom and helps it stay smooth.

Can I use an electric fondue pot with Mifroma Cheese Fondue?
Yes, an electric fondue pot works well for our Mifroma Cheese Fondue. You can also set a traditional fondue pot over a sterno or burner at the table. Whichever you use, keep the fondue at a boiling point while you serve it. With an electric pot, you can simply turn the dial up or down to hold that heat through the meal. Stirring each time you dip also keeps the cheese evenly melted.

Does Mifroma Cheese Fondue contain alcohol?
Yes. Our Mifroma Cheese Fondue is made with white wine and cherry brandy, as a traditional Swiss fondue is. Cherry brandy, often called kirsch, is classically stirred into Swiss fondue. Heating drives off some of the alcohol, but boiling does not reliably remove all of it. Keep this in mind if you are serving children or anyone who avoids alcohol.
