In ours, the pretzel crumbs and sea salt handle the salty side, and caramel pieces made with cream and butter plus a honey and almond nougat handle the sweet side. That region matters because, by our count, about 70% of the world's cocoa is grown there. The US government-funded NORC report found that, on aggregate, at least 1 in 2 children in cocoa-growing households in West Africa were performing child labor, and 1.56 million children were working under illegal conditions in 2018/19. Our Everything Bar is milk chocolate loaded with caramel pieces, almonds, nougat, pretzel crumbs and sea salt. The chocolate itself is sugar, dry whole milk, cocoa butter and chocolate liquor, with soy lecithin. The caramel pieces are sugar, wheat syrup, cream and butter. The nougat is cane sugar, wheat syrup, almonds, honey, cocoa butter, potato starch and egg whites. The pretzel crumbs are wheat flour, salt, sunflower oil, malted wheat flour, yeast and sodium hydroxide, the ingredient that gives pretzels their classic browned crust.

Does the Everything Bar contain nuts, gluten or eggs?
Yes, going by its ingredient list, our Everything Bar contains tree nuts (almonds), wheat, egg (egg whites), milk and soy (soy lecithin). Almonds appear twice, as almond pieces and inside the nougat. Wheat comes from several places: wheat flour and malted wheat flour in the pretzel crumbs, plus wheat syrup in both the caramel and the nougat. The egg whites are in the nougat.

Is the Everything Bar milk chocolate or dark chocolate, and what's the cocoa percentage?
Our Everything Bar is milk chocolate, made with 32% cocoa solids. Dark chocolate bars usually carry a higher cocoa percentage and little or no milk, so they taste more bitter and intense. At 32% with dry whole milk in the recipe, this one sits on the creamy, sweeter side, which suits the caramel, nougat and pretzel pieces mixed through it.

Where is the Tony's Everything Bar made, and how should I store it?
Our Everything Bar is made in Belgium. Store it in a cool, dark, dry place. Chocolate kept somewhere warm or humid can develop a pale, dusty-looking bloom on the surface; it's harmless to eat, but it dulls the snap and texture.
