No‑Bake Icebox Cake Instructions (9×13 Pan)

Ingredients 

  • 3½ cups heavy cream or dairy‑free coconut cream (coconut cream is a 1:1 substitute for regular heavy cream- just refrigerate a couple of hours before assembling this dessert!)
  • ½ cup powdered sugar
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt
  • About 4 cups fresh and/or canned fruit
  • 25–30 graham crackers (regular or gluten‑free)
  • Optional garnish: extra fruit or chopped nuts

Step‑by‑Step Instructions

  1. Whip the cream
    Add the cream, powdered sugar, vanilla, and salt to a large mixing bowl. Beat on low, then increase to high speed, until the cream becomes thick and holds stiff peaks.
    Tip: You can use a stand mixer, hand mixer, or a whisk and some arm power.

  2. Divide the whipped cream
    Use a spatula to gently divide the whipped cream into four equal portions right in the bowl. This makes layering easy and even.

  3. Prep the pan
    Spoon a small amount of whipped cream into the bottom of a 9×13 baking dish and spread it thin. This helps the first layer of crackers stay in place.

  4. First cracker layer
    Line the bottom of the pan with graham crackers, breaking them as needed so the layer is snug and even.

  5. Add cream
    Spread ¼ of the whipped cream evenly over the crackers.

  6. Add fruit
    Sprinkle ⅓ of the fruit evenly over the cream layer.

  7. Second cracker layer
