Ingredients
- TC Farm Gryo meat
- Pick your favorite gyro toppings:
- Tomatoes
- Cucumbers
- Lettuce
- Feta Cheese
- Red Onions
- Olives
- Hummus
- Pita bread (or try a sandwich, bowl or a gyro salad!)
- Dressing (instructions below)
- Olive oil
- 1 clove minced garlic
- 1/2 cucumber, shredded
- 1 small bunch mint
- 1 cup yogurt
- 2 big pinches salt
- 1/4 tsp. ground turmeric
Make the Dressing
In a small bit of olive oil, lightly cook the garlic; don't let it brown. Combine all ingredients, taste and adjust as you like.
*If you have an immersion blender, don't bother mincing garlic or shredding cucumbers... just lightly cook the garlic whole described above and then puree everything together. You could keep the mint out and chop that and add later if you still want the leaves intact.
Sear the Gyro Meat the Gyros
1. Pre-heat a heavy cast iron pan
2. Working in batches, sear the gyro meat, turning as needed to ensure even browning and avoiding to burn the edges.
3. Remove when the meat is seared to your liking. You also can brown the Gyro meat by broiling in an oven.
Assemble the Gyros!
Build a gyro, sandwich, salad or bowl using your favorite toppings, then top with dressing. Yum!
