Mushroom & Garlic Chowder
A perfect & easy way to use up mushrooms! TC Farm offers a variety of organic mushrooms each month.
Our mushroom sampler features a rotating variety of mushrooms and we also offer Maitake and Trumpet mushrooms on a regular basis.
This recipe is versatile and you can use whatever mushrooms you have on hand.
Ingredients
- ¼ pound of TC Farm bacon (optional)
- 2 cups sliced celery
- 1 onion, chopped
- 8 ounces mixed mushrooms
- ¼ cup flour
- 1 cup chicken or vegetable broth
- 1 cup cream
- ½ cup milk
- 4 cloves minced garlic
- Salt and pepper to taste
Instructions
- If using, chop bacon into 1/2 inch slices and sauté until crispy. Set aside to use as.a topping
- Save 2 tbs of bacon fat and add to a medium sized sauce pan (or use butter / oil)
- Add celery, onion and mushrooms and sauté on medium heat, stirring frequently until cooked. The onions will be translucent.
- Sprinkle with flour and combine. Add broth and simmer until thickened.
- Add cream and as much milk as necessary to achieve your preferred consistency.
- Add the garlic and salt and pepper to taste.
- Serve topped with crispy bacon bits or another topping of your choice!
