Mushroom & Garlic Chowder


This Mushroom & Garlic Chowder is everything you want when the weather turns crisp—earthy mushrooms, aromatic garlic, and savory bacon in a warming, creamy base. It's comfort in a bowl.


This recipe is versatile and you can use whatever mushrooms you have on hand. 

Ingredients

  • ¼ pound of TC Farm bacon (optional)
  • 2 cups sliced celery
  • 1 onion, chopped
  • 8 ounces mixed mushrooms
  • ¼ cup flour
  • 1 cup chicken or vegetable broth
  • 1 cup cream
  • ½ cup milk
  • 4 cloves minced garlic
  • Salt and pepper to taste

Instructions

  1. If using, chop bacon into 1/2 inch slices and sauté until crispy. Set aside to use as.a topping
  2. Save 2 tbs of bacon fat and add to a medium sized sauce pan (or use butter / oil)
  3. Add celery, onion and mushrooms and sauté on medium heat, stirring frequently until cooked. The onions will be translucent.
  4. Sprinkle with flour and combine. Add broth and simmer until thickened.
  5. Add cream and as much milk as necessary to achieve your preferred consistency. 
  6. Add the garlic and salt and pepper to taste.
  7. Serve topped with crispy bacon bits or another topping of your choice!
