Pesto Chicken Melt
Ingredients
- 2 Tbsp of olive oil
- 1 TC Farm chicken breast
- Squeeze of lemon juice
- ½ teaspoon of sea salt, red pepper, and black pepper
- 1 tsp of Italian seasonings (thyme, rosemary, sage)
- ½ red onion (thinly sliced)
- Pinch of microgreens
- Slice of tomato or diced cherry tomatoes (if desired)
- Slice of mozzarella or Rochdale Cheddar
- TC Farm Heritage Wheat bread or ciabatta
- Drizzle of balsamic dressing
- Seven Songs garlic scape pesto (or make your own with our fresh basil!)
Instructions
- Season chicken breast with salt, pepper, red pepper flakes, and Italian herbs.
Add onion, microgreens, and tomato if desired. Drizzle balsamic glaze on top.
Add chicken and cheese. Toast in the oven at 350 for 5-10 minutes
Cut bread loaf into long slices, half, and spread layer of pesto
Add onion to skillet and cook on medium-high heat until cooked through and lightly caramelized. 3-5 minutes.
Heat olive oil over medium heat. Add chicken, squeeze lemon slice, and cook for 5 minutes on each side. Remove from heat. Leave breast whole or shred, if desired.
