Our Reserve Cheddar is made in Ireland and is vegetarian friendly. It's good on a cheese board, sliced thin with crackers and apples, or grated into a sauce or over a baked dish. Keep it refrigerated.

What makes a cheddar taste sharp, and how long does sharp cheddar need to age?
Sharpness in cheddar comes mostly from time. Our Kerrygold Reserve Cheddar is aged for 12 months, which is why we describe it as "sharp & rich". As cheddar matures, its proteins and fats slowly break down, so the flavour gets stronger and more savoury and the texture firmer. Young cheddars aged a few months taste mild and creamy, and the longer a cheddar ages, the sharper it gets. So while the flavors in our Reserve are concentrated, the finish is still rich and smooth.

What is grass-fed cheddar cheese and why is Irish cheddar often grass-fed?
Grass-fed cheddar is cheddar made from the milk of cows that graze pasture, and our Kerrygold Reserve Cheddar is made with the milk of Irish grass-fed cows and carries our Grass Fed certification. Ireland's mild, wet climate keeps grass growing for much of the year, so dairy cows there can spend long seasons out grazing. Our milk comes from small, family-run dairy farms across Ireland, many passed down through generations, and about 14,000 co-op members supply us with a focus on producing grass-fed milk.

Is cheddar cheese vegetarian?
Not every cheddar is, but our Reserve Cheddar package states "VEGETARIAN FRIENDLY". Whether a cheese suits vegetarians depends on the enzymes used to set the milk: traditional rennet comes from the stomachs of calves, while many cheesemakers now use microbial or other non-animal enzymes. Because ingredient lists often just say "enzymes," vegetarians usually look for a vegetarian claim on the pack. Our ingredient list reads pasteurized milk, salt, cheese cultures & enzymes.
