Mellow White Miso is a short-term miso which means that it ferments for less time (15 days to 1 year) and is made with more rice koji and less salt.  The result is a light golden color white miso paste with a mild, delicate flavor and a touch of sweetness.

Ingredients: Organic whole soybeans, organic handmade rice koji, sun-dried sea salt, Blue Ridge Mountain well water, koji spores
